Zucchini flowers are not a surprising recipe to be featured on a menu. However, stuffed with meat and vegetables and then baked in the oven as this elderly Greek woman was doing, not so usual.
Whilst exploring the town of Parnassus we happened to stumble across this woman preparing her zucchini flowers for that evenings dinner, so we asked what her recipe was, and this is what she said …
To prepare the zucchini flowers for stuffing they need to first have the inner flower cleaned out so that all is left is the ‘shell’ of the flower, its petals. Once this has been done the flowers are then thoroughly washed to ensure there is no remaining hidden dirt or living 'hitchhikers'.
Once washed, the flowers are now ready for stuffing. The stuffing is a mixture of minced meat, diced vegetables and a little bit of soft cheese to help combine the mixture.
To prepare the stuffing the minced meat is browned in a pan on high heat with a little garlic, onion and olive oil. Once browned the diced vegetables are added to the pan with a seasoning of salt, pepper, oregano and lemon zest to taste. Once the flavours have combined and the vegetables have softened they are taken off the heat to cool to a comfortable room temperature. Once the mixture has cooled enough to touch it is ready to be stuffed into the zucchini flowers.
Once the desired filling is inside the flower, the tip of the petals are twisted to help keep the shape of the flower. The outside of the zucchini flower is brushed lightly with olive oil to attain a light crispiness whilst baking in the oven.
